At AVIVO, we start by listening to the land. We chose Mediterranean varieties that naturally thrive in our climate and soils with little intervention. Because they’re so well-suited, we farm with fewer tractor passes and minimal leafing - cutting our carbon footprint dramatically. In the cellar, the grapes arrive balanced and vibrant on their own, free from unwanted chemicals, and produce fresh wines that are full of character.

Transparency is at the heart of our winemaking. Unlike many wines with hidden additives, AVIVO keeps it simple: just organic grapes, naturally fermented with a touch of sulfur dioxide at bottling to maintain freshness.

That’s it—no sugar, no colors, no extras. Dan ensures sustainable measures go into every detail, even at bottling, with use of lightweight bottles, corks made from recycled ocean-bound plastics, and eliminating the use of capsules. For us, it’s about delicious wine, minimal intervention and farming that restores the planet.
